Packed with wholesome, natural ingredients and bursting with the tantalizing flavors of peanut butter and bananas, these moist cupcakes are easy to bake and decorate. Regardless of your culinary skills, your dog will think you're a star chef when you whip up a batch of these yummy treats.
• 3/4 cup oat flour
• 3/4 cup brown rice flour
• 1/2 pint, 1 percent skimmed milk
• 2 eggs
• 1 cup + 1/2 cup organic, natural peanut butter
• A ripe banana
• 4 tablespoons raw wildflower honey
• 8 tablespoons olive oil
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon pure vanilla extract
• 1 cup low-fat cream cheese
1 - Preheat the oven to 325 degrees Fahrenheit. Mash the banana in a large bowl. Add the skim milk, 1 cup of the peanut butter, 4 tablespoons of the olive oil, honey, eggs and vanilla and mix together until well combined. Combine the flours, baking powder and baking soda and mix well or sift together. Add the wet ingredients to the dry a little at a time and mix until well combined.
2 - Divide the batter evenly between the cupcake or muffin cases. Bake for 15 to 20 minutes until the cupcakes have risen and spring back when pressed with a fingertip. Insert a knife into one of the pupcakes; if it comes out clean, they're done. Remove the tray from the oven and let the cupcakes cool completely on a wire rack.
3 - Make the frosting. Combine the cream cheese with 1/2 cup of peanut butter and 4 tablespoons of olive oil and beat with a stick blender until fluffy. Transfer the frosting to the piping bag. Decorate the cupcakes with happy faces, stencil designs or animal faces. Store in the refrigerator for up to three days. These cupcakes may be kept in the freezer for up to three months.
Attention - If your dog is overweight, only offer cupcakes as a once-in-a-while treat.
